Crushed Green Freekeh
Reference: Crushed Green Freekah
Ingredients: Roasted green wheat (may contain traces of nuts)
Freekeh is durum wheat that is harvested whilst still green and roasted on an open fire. Our traditional Freekeh is a clever alternative to rice and pasta, with three times the fiber of brown rice and more vitamins and minerals. Used in many dishes as a flavorful alternative to rice, freekeh can also be made into a delicious soup. Freekah used to be the traditional Palestinian grain befroe rice was introduced by the Ottoman empire. This special food, like Olive oil is highly seasonal and only available to purchase once a year for two weeks int he spring. The young, green wheat is cut and left to dry for one day in the field and then formed into piles. These piles are set alight with fire while the farmers turn it with a pitchfork, resulting in a unique smoky flavour, it is then hulled and left to dry for two weeks before being packaged and sent to our customers. Freekah is Perfect for Vegetarian and Vegan Diets.
