Za’tar, also known as thyme, is harvested and dried by women in rural communities in the Jenin district in Northern Palestine. Dried thyme is ground, then sumac, a cherry red spice used for its citrusy sour taste, is added along with roasted sesame seeds and salt. Za’atar is the most often used spice mix in Palestine and is traditionally eaten for breakfast with olive oil and fresh ﬂat bread. The delicious aroma of freshly picked thyme, combined with the nutty flavor of roasted sesame and bright acidic notes from sumac makes this an incredible combination for marinades and seasoning.
